Avocado Bean Dip
Ingredients:
1 can refried beans
salsa of your choice, adjust amount to your taste
salt and pepper
2 avocados, sliced lengthwise
Directions:
- Combine beans and salsa in a glass bowl
- Microwave on high for 2 minutes, stirring a few times
- Stir in salt and pepper to taste
- Transfer to a flat-edged soup bowl
- Arrange avocado slices around the edge of the bowl with the ends touching the dip
- Garnish with chopped fresh cilantro and/or a dollop of sour cream
- An alternative serving option would be to transfer dip to individual sized serving cups and arrange avocado slices vertically with the bottoms sunk into the dip and the tops reaching out of the cups.
